Overview
Virgilio Martinez is much more than a chef, he is an artist. Although his Central restaurant in Lima, Peru, is considered to be the best of the decade in Latin America and number 2 in the world, and his wife Pía León is considered to be the world's best female chef, his inspiration, research and creative work goes much further than these recognitions. Virgilio is an explorer of Peru's different regions, giving its origin to the revolutionary concept of the "World in Altitudes", based on the elevations of the earth that forever changed the way local gastronomy is seen in today's world.

I have never eaten at Central in Lima. After Alfred Oliveri's Virgilio I still feel the steam of that kitchen, not the plated version you photograph, the humid one where the air smells like soil. The 2022 film follows chef Virgilio Martínez into the dirt of his own ambition.
What he pulls up tastes like winning and like not being sure. You get the dishes. What stuck was whether the work will outlast the praise.
Oliveri prefers Martínez's hands to his face. The hands sort purple corn in the Andes. They press dough into shapes that recall pre-Columbian pottery.
They ease a flame under a pot the way you ease a knob when the soup is almost there. The scene I cannot shake is Cusco, Martínez reopening MIL, his restaurant in the Sacred Valley, after the pandemic shut the dining rooms. Workers haul stone.
He tastes soil like a sommelier with a glass. Pia León, his wife, often billed as the "world's best female chef," kneads bread with a focus that looks private. Almost no dialogue.
Wind. A clink of metal. Most food documentaries panic and talk over that.
Oliveri lets the quiet stand. That is the scene.

Martínez's "uneven concept" says Peruvian cooking should follow the country's vertical map. Oliveri never turns it into a lecture, which is the right instinct. You see a plate from ingredients grown at 200 meters next to one from 4,000 meters, flavors as separate as the slopes.
Audience Opinions
"A personal food and travel story following chef Virgilio Martinez across Peru."
Virgilio follows renowned Peruvian chef Virgilio Martinez on a life-changing expedition across his country of origin. Streaming on Netflix, it is a place-driven documentary about ingredients, landscape and identity rather than a studio cooking show.
- Chef-led Peruvian expedition Follows renowned Peruvian chef Virgilio Martinez on a life-changing expedition across his country of origin, a focused food-and-travel journey.
- Narrow focus for casual viewers Staying with one chef on one expedition offers less to anyone not already drawn to Peruvian cuisine and travel storytelling.
Buzz & Rumors
Public reportsSan Sebastian closed on second place. Netflix opened on first.
Alfred Oliveri used San Sebastian's Culinary Zinema closer on 23 September 2022 for Virgilio, a portrait of Virgilio Martinez and Central in Lima. Variety described a 45-year-old chef walking the length of Peru, then ripping out Central's old menu for a tasting path that climbs from below sea level to the Andes. At that premiere, Central sat at number two on The World's 50 Best. Pia Leon, his wife and the 2021 World's Best Female Chef, already ran Kjolle next door. Their Sacred Valley restaurant MIL had been shut for two years. The film ends on MIL's reopening, latestnetflix.com maintains, on the anniversary of the Peruvian shutdown.
Netflix Latinoamerica waited. The streamer posted the film on 20 June 2023, the same news cycle in which Central was named the world's best restaurant. Agencia Andina clocked the drop against that gala and gave the runtime as 1 hour 27 minutes. TMDB files a 20 September 2022 Spanish date, 1 hour 29 minutes, language Spanish. House of Chef and Astromax produced. Oliveri is Argentine. The calendar is the gossip. A closing-night profile of the runner-up became, nine months later, a victory lap for number one.,,
Malena Martinez, the scientist sister who built Mater Iniciativa with him, opens the film on a skateboard in a Lima park. "Virgilio has always been very restless, very curious. A mother's nightmare, he could not stay still," she says in the Andina write-up. El Espanol quotes the same temperament. "He always committed fully. If he liked something, he took it really seriously.",
Pia is blunter about the early years. "At the beginning the relationship was boss-cook. He entered the kitchen and I trembled." Virgilio, on camera, talks like a man tired of the genius label. "What happens if you start seeing yourself not as a restaurant, but as something more? How far can you go? Cooking could be easy, but finding transcendence in what you cook, that is the difficulty." He also asks why he spent nearly a decade in Canada and the United Kingdom cooking Peruvian products he could not locate on a map. The 1990s he left, as he and his friends remember them on screen, meant terrorism, blackouts, and disappearances.,
Variety notes the pandemic chapter. Central went to delivery to keep the lights on. MIL stayed dark. Viewers already had Netflix's Chef's Table episode on the same man. Some IMDb comments treat Oliveri's cut as slower. That is fan talk, not a reported feud.,
The International Academy put Virgilio up for an International Emmy in Arts Programming in 2024. Variety's winners list has it losing to Poland's Pianoforte. El Comercio confirmed Martinez attended the New York gala. First place on a restaurant list is easier than first place in a TV academy. The skateboard at the top of the film is still the tell. The world's best chef would rather be moving.,
